Minnie was born Thursday April 22, 1943, in Frederick, Oklahoma to Jay and Ina Ruth (Beatty) Keeler and died Thursday October 5, 2023, in Yukon, Oklahoma at the age of 80 years, 5 months and 13 days.

Minnie was a graduate of Dickson High School. On December 28, 1962, she married Ray Coffey in Gainesville, TX.

Minnie loved to bake and cook. Her family members still remember her amazing casseroles, goulash, biscuits, and goody cookies, just to name a few. However, it was her pecan pie, which was 100 percent homemade, that she was famous for. The pecans came from their own backyard, picked by her husband Ray. She also loved to collect amazing memories of her family, in her picture room. She would show it off, so proud of all her family's accomplishments and well beings. Her sister Becky was one of her favorite people to talk about, and she always said she was like a mother to her. Her laugh was infectious, and could shift the mood of a room from sad to happy. Anyone that heard her laugh will keep it with them forever and remember her amazing spirit.

Minnie was preceded in death by her parents; siblings Charles Gilmore, sister Beth Carroll, and Charles Keeler and her husband, Ray Lee Coffey. She is survived by her daughters, Tammy Davis of Raeford, North Carolina, Debra Hunter of Yukon, Oklahoma; sister Becky Thompson of Ardmore; grandchildren, Derek Hunter of Oklahoma City, Oklahoma, Ashley McGee of Yukon, Oklahoma, Amber Leitch of Enterprise, Alabama, Hannah Davis of Flint, Texas, Sarah Davis of Raeford, North Carolina, Erica Davis of Conway, Arkansas, Brandon Hixon of Columbia, South Carolina; 17 great grandchildren; and several nieces and nephews.
